Our Philosophy

At Tallo Restaurant Inc, we believe that great food and great company go hand in hand. Our mission is to create memorable dining experiences by providing exceptional service and delicious cuisine. We are committed to using only the freshest ingredients and supporting local farmers.

Tallo

The name Tallo was born during a conversation with my daughter Penelope, just weeks after Hurricane Maria swept through Puerto Rico. We were watching the plants begin to bloom again and the trees push out new branches. In that moment, we reflected on the vital role of a plant’s stem, how it works in harmony with the roots and ultimately supports the process of bearing fruit. In simple terms, the stem is the channel, the lifeline that transports nutrients between the roots, the fruit, the flowers, and the leaves.

During that same conversation, I shared with my daughter my dream of one day opening a restaurant, one where I could offer guests a menu and an experience shaped by everything I had learned over the years. I asked her what such a restaurant should be called. Without hesitation, she answered: Tallo.

We are Tallo. We are the ones who, through years of experience and dedication, have cultivated the knowledge needed to bring an exceptional culinary experience, a warm atmosphere, refined cocktails, and genuine hospitality.

My heartfelt thanks to Kelvin and Ramón for helping make this dream a reality, today we are proud to welcome you to Tallo, American/Caribbean Restaurant & Bar.
